I can not take full credit for this light and delicious, summer side. I was introduced to this dish when it was prepared by my friend Lauren at a cookout this past spring. At first, I was a little turned off to the idea of a salad comprised of just cucumbers and onions. How could it possibly be tasty or satisfying? Since trying my first bite and being pleasantly surprised, I have made this dish several times for family and friends. Everyone seems to have the same reaction as myself… they are hesitant but LOVE it.
This recipe has few ingredients… the most important:
- 1-2 large cucumbers, quartered lengthwise and then sliced
- 1/2 red onion, sliced thinly
- 3 tbsp rice vinegar
Mix these together and season with salt and pepper. Before serving, let the salad sit for 30+ minutes, stirring every so often. Last, drain most of the vinegar out, put it on the table and watch it disappear.
This salad is refreshing on a hot summer day and perfect when paired with turkey burgers. You can also add other ingredients to your cucumber onion salad to make it a little less simple. For example, add 1 tsp of fresh dill and a splash of squeezed lemon juice for more flavor. If you are looking for more spice, add a pinch of cayenne pepper and a pinch of parsley.
